Unpacking and editing .apk files

I see that most Android games are .apk files and that these can be renamed to .zip and unpacked.
I've already experimented with a few files, it works easily enough to unpack, you end up with numerous folders and files.

My question is, can you edit some of the art, save the files, then repack into a .apk?
Will the .apk still work when uploaded to my tablet?

Some of the art in free games is very difficult for me to see, it is too bright or intense for my old eyes and small screen.
I'm hoping to tone it down a bit.

Will it work?
