Looking through the settings, I don't think you can. You can tweak some of the display stuff, terrain colours, border colours, terrain texture, even go NATO rather than picture units, but not from what I can tell, the colour of the unit background on the chit.
In the Eastern Front games he makes the Germans are obviously not red. But in this Western Front game I'm afraid the Germans get the red background. I've checked his other Western Front titles D-Day (Allies(You): Blue, Germans: Red), Fall of Normandy (Germans(You): Blue, Allies: Red) etc... basically the side you play is always Blue background and the enemy side is always Red background.
Each title is a crafted scenario with Victory Points and objectives, and it only allows you to play from one side.
