Erebus and Abaia, in the Book of the New Sun series (Gene Wolfe) have always majorly creeped me out. The story of how they started far in the past from the time period of the books, and what they grew into was pretty cool.

Avshar from the Videssos books (Harry Turtledove). He started as a priest of the great and good god, Phos, but bitterness and despair made him turn to the worship of evil Skotos. What followed then was a VERY long and storied career of evil. His tale, as opposed to those of his many protagonists, is told in The "Bridge of the Separator".
