Garak was tied with Martok (obviously) as my favorite character in DS9.  Moreover, would love to see a series further explore the history & complexity of the Cardassians; one of the more interesting Trek races IMO.

Since Garak and Worf served together for quite a while on DS9, there's no reason the series couldn't feature both of them. (Aside from whatever eventually happened to Garak. I recall he survives DS9 but, he went into retirement or something?)
At the end of the series, he remains on Cardassia Prime, presumably to help rebuild his shattered world/people. 

In the EU novels, he ends up having a fairly important role in the new government.  He eventually becomes the resurrected Union's ambassador to the Federation.
