Quite a mob bearing down on the Prince!

What is the significance of having the stats either on the short or long side? Does it denote different types of units or what formation a unit is in?

One side is column; the other is line.  I'll do a close up.

How long does a unit take to change from column to line? Can it move and change in the same turn?

Yep.  Column is sort of the default state (eg.  = general order in close terrain = post-charge cavalry).  It's only 1 MP to change formation for inf and no MP for cav (there are some facing restrictions).  The turns are 30 minutes long so that seems reasonable.

Here is 3:30 after the French charge phase has wiped out the last straggling 7th coalition militia:
